Doug's Black Bean Soup
What Goes In It:
1 lb. of black beans
2 T. of olive oil
1 medium tomato, whole
1 bay leaf
1 half a medium onion, whole
1 half a green pepper, whole
1 garlic clove: minced
1/2 cup of olive oil
1 half a medium onion: chopped
1 half a green onion: chopped
1 garlic clove: minced
1-2 t. crushed oregano
1/4 t. cumin
2 T. red wine vinegar
1 T. salt
1/2 t. hot sauce
2 T. Sherry
garnish: chopped tomatoes, green onions, shredded cheddar...
What to do:
Combine first five ingredients, cover with water. Boil until beans are almost tender. Remove everything but beans.
Saute next nine ingredients for a couple of minutes, the add to beans.
Cook until beans are tender.
Serve either as a soup or over rice. Garnish.
