This probably resembles tabouleh in name only. That WAS the start for the recipe, but it didn't really end up that way.
The Stuff That Goes in It
- 1 to 1/2 cups of bulgar wheat
- 1/2 cu of cooked lentils
- 2-3 T. of a good olive oil
- 1 bunch of parsley, chopped finely
- 1 red onion, chopped
- 1 garlic clove, finely minced
- 1 t. of lemon or lime juice
- 1 T. of cumin
- 1 t. of coriander
- 1-2 T. of good olive oil
- salt -- to taste
- pepper -- to taste
- radishes, sliced
- carrots, sliced
- celery, sliced
- cucumbers, sliced
- tofu, cut into chunks and deep fried
- chopped Kalamata and Spanish olives.
- whatever else you want in it....
What to do:
- Soak the bulgar in hot water. Then drain.
- Put all the other stuff in it. Chill.
- Eat.
