Doug's Sort-of-Cajan Catfish
What Goes In It:
4 catfish filets: cleaned up a bit
butter for frying
Konriko (or a similar) Cajan or Creole seasoning
What to do:
Wash the catfish and trim.
Liberally sprinkle seasoning on one side (not the skin side)
put what would have been the skin-side, in the melted butter, in a non-stick pan, over medium heat. Cook until the flesh turns mostly white. Turn over. Cook until done. Then serve.
