Doug's Chickpea and Lentil Soup
What Goes In It:
1 and 1/2 cups of cooked chickpeas
1 large onion, chopped
2-3 garlic cloves, chopped
3-4 T. olive oil
1 14 oz. can of chopped tomatoes
3 celery stalks, with leaves...chopped
1 medium carrot, chopped
2 T. of tomato paste
salt and pepper
1/2 t. ground cumin
1/2 t. of ground ginger (optional.... I saw this in a cookbook)
juice of 1/2 lemon
4 small zucchini, slice and quartered
pasta (vermicelli (broken up), orzo, angel hair (broken up))
1/2 cup of parsley, chopped
1/2 cup of cilantro, chopped
What to do:
soak and cook chickpeas, according to directions
saute garlic and onions in olive oil. Don't burn the garlic.
add celery, saute briefly
add tomaoes, carrots, salt and pepper, cumin (or ginger), and lemon juice. Cook for about 12-15 minutes...or to taste.
add pasta. Cook
al dente
add zucchini. Cook for a minute or so. Don't hammer it!!
serve with crusty garlic bread
add parsley and/or cilantro...serve
