Doug's Dilled Zucchini Soup
I have no idea where I first had this soup or saw a recipe. It's pretty good, though.
The Stuff That Goes in It
4-5 medium zucchini, sliced
2 cups of chicken broth (or veggie stock or water)
1-2 chopped garlic cloves
1-2 t. dill
salt: to taste
pepper: to taste
2 cups of Half-and-Half
What to do:
Get a sauce pan, and cook the zucchini and garlic in the broth until tender.
Process in blender until smooth. Return to sauce pan
Stir in dill, salt, pepper, and Half-and-Half.
Put in bowls, garnish with a spring of fresh dill.
Serve with big chunks of bread and a good salad, and you have a meal.
