This was a "throw-together one evening for a very nice woman named Lisa. She said it turned out pretty well.
The Stuff That Goes in It
1 good bunch of kale: carefully cleaned (no sand!!!) and chopped
1-2 shallots: chopped (you could use a leek or a red onion, instead)
2 cloves of garlic: minced
3-4 T. of olive oil
pine nuts: howevever many you want (or substitute another nut like pistashios...)
salt
black pepper
What to do:
Chop the kale, shallots, and garlic onions
Use a wok or large skillet. Put in the olive oil, kale, shallots and garlic. Saute until you think they are tinder enough for you.
Add the pine nuts (you could have browned them in advance in a dry, cast-iron skillet or under the broiler, if you want to), along with the salt and pepper to taste.
Serve with big chunks of bread.
You can use this as a side dish with pasta, or whatever you want....
