Doug's Lentil and Mushroom Soup
Hardy and filling, and it doesn't take that long to make.
The Stuff That Goes in It
2 T. of Olive Oil
1 onion, minced
1-2 garlic clives, chopped
1 small chile, chopped (optional)
1 carrot, chopped
1 celery stalk, chopped
2 1/2 cups of mushrooms, sliced
1/4 cup of red wine (optional)
2/3 cup of lentils
4 cups of mushroom stock
2 T soy sauce
salt and pepper
Mushroom Stock
The Stuff That Goes in It
1 cup of dried mushrooms
6 cups of boiling water
1 Onion, chopped
1 celery stalk, chopped
2 leeks, chopped
8 oz. fresh mushrooms
2 T. of olive oil
1-2 bay leaves
1/4 t. of thyme
a bit of rosemary (optional)
Simmer for about half an hour or forty-five minutes, strain, set aside.
What to do:
Saute onion, garlic, and chile in olive oil
Add carrot, celery, mushrooms, redwine, lentils and stock
Cook until lentils are tender
Add soy, salt and pepper to taste
Serve with good bread
