Doug's Seared Shrimp with Basil Sauce
Got the idea for this from Emeril, but tinkered with it a bit.
What Goes In It:
1 lb. or more of cleaned Tiger Shrimp (or whatever)
1-2 T. of paprika
The Sauce
1 cup of basil leaves
1 small shallot
1 small green onion
1/8 t. thyme
olive oil: enough to make a sauce
1/2 t. lime juice
sprinkle of cajun seasoning
What to do:
Clean shrimp and dust with paprika. Set aside.
Combine the rest in blender and puree to make the sauce.
Sear the shrimp in a hot skillet, without oil.
Add to pasta and dress with the sauce.
Garnish with a basil sprig and serve with garlic bread.
