Doug's Broccoli and Spinach Salad
Hardy and filling, and it doesn't take that long to make.
The Stuff That Goes in It
2 T. Olive Oil
1/4 cup of butter (or you can use more olive oil)
1 medium onion, diced
1-2 garlic cloves, chopped
2 potatoes, chopped (optional, if you want...but soup won't be as thick)
1 head of broccoli, chopped
10 oz or so of Spinach, fresh or frozen
3 cups of stock (veggie or chicken)
1/2 cup of gargonzola (or Blue or Stilton, whatever)
1/2 a lemon worth of juice
1 t. nutmeg
salt and pepper
1/2 cup of pine nuts
What to do:
Saute first four ingredients for about 3 minutes or so
Add broccoli, spinach, potatoes, and stock. Simmer for 15 minutes.
Add gargonzola, lemon juice, nutmeg, salt, and pepper
Whooz in the blender or not, as you see fit
Put in bowls, pine nuts on top
Good bread. Eat
