Hardy and filling, and it doesn't take that long to make. Good for the planet, good for the animals, good for you, too...while were at it.
Marinade for the Tofu: The Stuff That Goes in It
2 T. of lemon juice
1 T. of soy sauce
1 T. of tomato paste
1 garlic clove, crushed
2 t. of oregano
2 T. of olive oil
What to do:
Soak mushrooms (8oz or so) and tofu for at least 30 minutes, better an hour
bake at 400 F. for 10 minutes
serve over pasta or noodles
Footnote: If you can't find little portabellas (crimini), then you can use button mushrooms. This isn't really my recipe, BTW. I found it in a cookbook, but I can't remember the name of the book. Sorry..
