This is wonderful stuff!! Dr. Page brought me the recipe from South Africa. You can use it to season already finished food (a drop or two), for stir fry oil, whatever. It kicks ass in terms of flavor. Make extra bottles and give them to friends. They will love you.
What Goes In It:
at least a pound of fresh chiles (Jalapeno, Serrano, Cayenne, Habanero, whatever), sliced
salt: to taste
pepper: to taste
juniper berries: 10-12 crushed
two heads of garlic cloves, peeled
6-8 bay leaves
a bottle of sunflower, peanut, or soy oil
What to do:
chop up the chilies, with seeds and veins
peel the garlic cloves (a pain), and crush or slice them
pour the oil in a large skillet or pan
add the other stuff to the oil
stir over low heat... you don't want to get the oil too hot, just until you see little bubbles coming up in the oil
simmer it for about 45 minutes to an hour
let it cool
when cool, strain the veggie mass from the oil. The veggie mash will have absorbed a lot of oil and flavor. After the oil has drained (you may want to mash it a little in the sieve), sav the mash and use for curries and such. Not too hot. Save in glass bottles, in the fridge.
