Doug's Okra and Tomatoes
Anyone who has lived in the South or in India has prolly had a variation on this.
What Goes In It:
a pound or so of okra
one medium onion, chopped
3 garlic cloves, chopped
3 T. vegetable oil
4 medium tomatoes, chopped (or a can)
salt and pepper
juice from 1/2 a lemon
1/2 t. of oregano
parsley, chopped (or cilantro), to taste
1 t. of curry powder or cumin (optional)
chili flakes, to taste (optional)
What to do:
wash okra, put in boiling water until reasonably tender
in a separate pan: saute oninons until browned a bit
add garlic...but don't burn
add tomatoes, salt and pepper, lemon juice and oregano, cook for 3 or 4 minutes
add in okra, simmer for a couple of minutes
serve over rice, with parsley mixed in
