Doug's Pasta with Roasted Tomatoes
What Goes In It:
1 and 1/2 pounds of cherry, patio, grape, etc. tomatoes, sliced in half
3-4 garlic cloves, chopped
1/2 cup of olive oil
4 sundried tomatoes, chopped
1 cup of so of chopped, mixed herbs (basil, oregano, thyme)
Romano or Parmesan cheese, grated
pasta(angel hair, spagetti, long pasta)
What to do:
wash tomatoes, slice in half, sprinkle with salt. Put under broiler for twenty to thirty minutes...until roasted
saute garlic and sundried tomates in olive oil. Don't burn the garlic.
add tomatoes and herbs
serve over pasta
garnish with cheese
serve with crusty garlic bread
