Doug's Sasauge, Mushrooms, and Broccoli, with Pasta
This was a "throw-together," but it turned out okay. Quick, tasty, probably not too bad for you.
What Goes In It:
3 or 4 sausages (Italian, Polish, Bratwurst, Chrizo, whatever). Slice or crumble into the skillet
1 cup (at least) sliced mushrooms. Portabella, best.
broccoli florettes
olive oil
garlic clove, minced (if you wish)
chopped green onions
What to do:
Brown the sausage pieces. Remove from pan. Drain drippings, if you wish, reserving about a tablespoon.
Saute mushrooms until they are softened.
Add broccoli florettes (Don't saute until hammmered!! A minute or two is enough!)
Serve over pasta -- whatever type you like
Garnish with chopped parsley, chopped green onion, and some fresh olive oil
N.B.
You could substitute spinach, arugula, or some other green for the broccoli. Works pretty well...
