Doug's Spinach Omlet
What Goes In It:
10 or 12 oz of fresh spinach (or a package of frozen...cooked)
one large onion, chopped
4 T. vegetable oil
1 large tomatoes, peeled and chopped
4 eggs
1/2 t. of nutmeg
What to do:
wash spinach, saute until wilted, but not hammered
in a separate pan: saute oninons until browned a bit
add chopped tomato, salt and pepper, nutmeg
mix eggs in a separate bowl, then add tomato mix
put mix in a pre-heated (oven-proff) skillet, over low heat, until the bottome sets
put under the broiler, until for a couple of minutes, until done
