Doug's Spinach and Ricotta Tartlet
Well....it's basically a kind of quiche....
The Stuff That Goes in It
To Make the dough:
1 cup of flour
1/4 cup of butter
2 T. water
pinch of salt
The filling stuff:
4 oz frozen spinich, thawed, washed, drained (squeeze it in a towel)
1 cup of ricotta
4 t. of Parmesan
1/4 t. of nutmeg (or to taste)
2 eggs
4 T of Half and Half or light cream
salt and pepper
What to do:
make the dough, wrap in plastic wrap, refigerate for 30 minutes
roll out dough to fit tart pans (about 4")
prick bottom with a fork, bake at 400 degrees F. for 10 minutes
mix filling, put in shells, bake 20-25 minutes
