Doug's Thai Green Curry Paste
The Stuff That Goes in It
2 t. coriander seeds
1 t. cumin seeds
1 t. fennel seeds
1 t. black peppercorns
1/2 cup cilantro leaves
2 slices of ginger
1 stalk of lemon grass
12 serrano peppers, seeded and chopped (use jalapeno for less "heat")
4 garlic cloves
zest of one lime
1 1/2 t of salt
1 t. nutmeg
1/4 cup of peanut oil
What to do:
heat all the seads (first four things) in a dry skillet, then grind
add to the rest of ingredients in a blender. Whooz!
Footnote:
Will keep in the frig for about one week.
