Provenance: The May King Bradley Domestic Science Notebook was transferred to the University Archives from Library locked stacks on March 11, 1983. It was opened for research on October 1986.

HISTORICAL NOTE

May King Bradley apparently was one of the first domestic science students of the East Tennessee State Normal School (forerunner of East Tennessee State University). The cooking class developed out of the Industrial Arts Department in 1911. It quickly became known as Domestic Science, which in turn divided into two subdepartments: Domestic Science (cooking) and Domestic Arts (sewing and home decoration). By 1916 both were called Home Economics, which had become a well-established department of the Normal School, with an impressive curriculum.

SCOPE AND CONTENT

The May King Bradley Domestic Science Notebook contains recipes, tables for conversions of measuring, analyses of food and condiments, and a complete set of manners and rules to be employed at a formal dinner. It includes proper table settings and gives an in-depth look at the art of cooking "from scratch." The collection is stored in two folders in Small Collections according to accession number.
