For the Foodways of Appalachia course, Annette Coyle, visited the MoonPie plant in Chattanooga, Tennessee, and presented a report to the class. Afterward, she served MoonPie sundaes. Annette finished her master's degree in clinical nutrition at ETSU and now does diabetes education on the Alaskan tundra, where she created this recipe.
1 vanilla MoonPie
½ cup vanilla frozen yogurt
½ cup fresh tundra blueberries*
½ sliced fresh strawberries
3 tablespoons low-fat granola
3 tablespoons chopped walnuts, toasted (optional)
Have all ingredients measured and ready to go. Using a microwave-safe dish, heat the MoonPie in the microwave just until it is soft and the marshmallow filling begins to puff. Remove from the microwave and immediately top with the frozen yogurt, berries, granola, nuts, and whipped cream.
*If you aren't in western Alaska in July and can't pick fresh tundra blueberries, substitute regular blueberries, fresh or frozen.
