Food Service Management - Overview

Overview| Curriculum | Suggested Schedule

The Nutrition and Foods concentration provides students with a four-year program that culminates in a Bachelor of Science degree in Family and Consumer Sciences. The Food Service Management option provides students with extensive education, training and experience in all aspects of food and beverage management. The study of Food Service Management combines business, science and art to create a unique area of study. This program helps to prepare students to compete in the retail food market which ranges from healthcare to luxury cruise line food service.

The curriculum for this option was created by a cooperative effort between local food service operation owners (Meadowview, Pal's, Skoby's, and The Firehouse Restaurant) and ETSU faculty. As a part of the needs assessment done during the development process the program was designed to incorporate a series of three practical internships in addition to the required field study in the field. The practical experiences ensure that students graduate from the program with experience in the field as well as relevant knowledge in the field. Job opportunities abound in every corner of the world. Students may elect more traditional jobs such as food/beverage manager/director in independent or commercial operations, or more exciting work in the areas of food design/marketing, journalism or recreation and leisure.
