Doug's Deviled Eggs
The Stuff That Goes in Them
12 eggs: hard cooked.
some mayonnaise (start with a little and use only enough to bind the mashed yolks!!)
1/4 t. Dijon mustard
Kosher salt: to taste
garnish with paprika or fresh, chopped dill (or caviar, I suppose....)
What to do:
Cook the eggs. When cool, peel and slice in half, removing yolks to a bowl.
Mash yolks lightly with a fork.
Mix in mayonnaise and mustard (not too much)...only enough to bind the yolks.
Season, and return to the halved egg whites. Sprinkle with paprika or dill.
